11. How To: Mini Cakes | Blogmas 2015
I had a little day off today. I didn't go to school, so I could get some rest and get some work stuff done. I spent the whole evening baking and cooking. One of the things I made were these tiny little cakes, which are so cute!
I changed the recipe a little, because I didn't like the original one. (I will explain that later.)
Ingredients:
300g plain flour
200g butter
200g butter
20g cocoa
150g powdered sugar
100g ground nuts
100g ground nuts
(You can alternate them with coconut)
1 egg
1 egg
2 spoons of rum (or essence) - optional
For the topping:
Coconut pudding
(you can use whichever pudding you'd like)
crushed walnuts to decorate
(you can use whichever pudding you'd like)

How To:
1. Sift the flour, cocoa, powdered sugar and mix with ground walnuts. (You can use hazel nuts as well.)
2. Add the egg, rum and butter in room temperature. (It's easier to combine everything together when the butter is soft.)
3. Form a dough.
4. Preheat your oven to 150 degrees.
5. Fill your little cake trays with the dough, or simply form them with your hands.
6. Bake them for 20 minutes.
Once they are done, let them cool. After they're cold enough so you don't burn yourself, pop them out of the baking trays.
About the topping....
The original recipe that I found says that the topping should be melted butter with powdered sugar and ground nuts. I did that and let me tell you all you could taste was butter. Gross!
So I was thinking was else could I do... I tried to do whipped cream, but that didn't work. It didn't taste as good and melted really quickly.
And because I didn't want to do any buttercream, I thought I'd just make a classic pudding. So I did. I pour a teaspoon of the pudding onto each cake and let it set for few minutes. I also put some crushed walnuts on top.
I highly recommend using pudding instead of the original topping. It looks and tastes so much better!
