How To: Sugar Cookies
On the 30th of October it was my boyfriend's name's day, so I prepared him a little box with surprises which included these yummy cookies.
They looked incredibly good and tasted delicious, so I decided to share the recipe with you. They don't take long to make as well. You'll be done baking in few minutes, however the decorating needs a bit more patience.
Anyway, here's the recipe and also some photos, so you get the idea of how they look like.

Ingredients:
85g of unsalted butter
2 eggs
250g of plain flour
100g of caster sugar
1/2 tsp of baking soda
1/2 tsp of vanilla extract
For the icing:
2 cups of icing sugar
1/2 tsp of vanilla extract
4tbsp of lemon juice
How To:
Prepare two baking sheets with baking paper. Preheat the oven to 180°C. Mix the butter and sugar together. In another bowl, whisk the eggs with the vanilla extract and add it to the butter and sugar mixture. Sift in the flour and the baking powder. Mix until you form a dough. It's going to be very sticky, so you'll need to wrap it in a foil and let it rest in the fridge for 30 minutes.
After that, roll the dough out on a floured surface and cut out any shapes you'd like. I chose hearts, because they seemed appropriate ha-ha!
You don't need to bake them for more than 15 minutes, trust me. They should be slightly golden, but not too much. 10 minutes should be enough. After they're done, let them cool completely and decorate them with the icing.
When making the icing, just whisk everything together. It should be thin enough to fit in a piping bag, but thick enough not to drip all over the place. So add the sugar or water as you go along and you'll see what works best for you. I also added some blue food colouring as the whole gift was blue/green themed.
I highly recommend these, they are super simple. (You can trust me, because I'm not good at baking at all.)
